Our NEW farm store is now OPEN daily. Come on by for all your creamery favorites, some of our favorite items from folks we appreciate, farm-made products, household gifts, and treats. We hope to see you soon.
As Winter approaches we are enjoying the sunshine of Fall and the beauty that surrounds us with the changing color of the maples. We just lit our first fire of the season in our Esse cookstove and are pulling out sweaters, gloves, and hats. Our farm store will remain open ALL YEAR so stop by for your creamery products and other goods. I will be offering holiday gift boxes so follow us on Instagram for updates (Facebook too). For Sandpoint customers, you can order online and we will deliver on Wednesdays between 4-5 pm in Farmin Park, by the stage area. When you place your order, select Sandpoint (delivery every Wednesday) or pick it up on the farm in Clark Fork. Currently, we are milking Frankie, Dolly, t and Blossom. We look forward to Lulu coming back online after giving birth in late November so there will be plenty of milk for Winter cheesemaking. We have enjoyed sharing several varieties of cheese with you as well as hosting some tastings and events on the farm. on. Stay in touch, see you around the store. This is what the cheese room looks like now. We just installed our new 40-gallon kettle. We are now able to milk, process the milk, and make our creamery products all in the new barn.
How to Care for your Creamery items.
Let’s start with cheese. For fresh cheeses you will want to eat them within the week, they are not designed for storage. Those would be ricotta and Queso Fresco (fresh basket cheese). For aged cheeses, they will store well in the vacuum packages they come in and once opened you want to minimize exposure to air. So you can always vacuum seal it if you have that possibility, or wrap it tightly. If any mold appears you can easily cut it off, it will only be on the surface. You can also freeze cheese for later use.
Yogurt will last for a couple of weeks, it is a fermented item. If you only have a small portion left, put it in a smaller container, so once again there is less exposure to air.
Butter will keep well refrigerated. If you are leaving your butter out, only cut off a small portion so it isn’t sitting at room temperature for too long.
Our eggs are not washed as we have rolling nesting boxes, so they are clean when collected. They can be stored at room temperature or in the refrigerator.
Our milk and cream are sold the day we milk or make cream. They will last a week if stored in the refrigerator. If you have any questions please reach out, we are here to ensure you enjoy your fresh raw creamery items.
