Our NEW farm store is now OPEN daily. Come by for all your creamery favorites, some of our favorite items from folks we appreciate, farm-made products, household gifts, and treats. Fresh sourdough bread is available on Wednesdays; come early for it.

Winter is here! We are milking in the frosty mornings and fresh milk goes into our farm store daily, as do eggs. (a much-valued item in the cold months) This is the season I make the most cheese, preparing for Spring and Summer when the Farmers Market starts again. Winter Ridge Natural Foods carries our cheese and yogurt if you are in the Sandpoint area. You can always order online and pick it up at either the farm in Clark Fork or for Sandpoint customers, and we will deliver every other Wednesday between 4-5 pm in Farmin Park, by the stage area. When you place your order, select Sandpoint (delivery every other Wednesday) or pick it up on the farm in Clark Fork. Currently, we are milking Lulu, Dolly, and Ellie. We have enjoyed sharing several varieties of cheese with you and hosting tastings and events on the farm.

This is where we process the milk. We have a small bulk tank to cool and stir the fresh milk. The 40-gallon kettle is where we heat the milk to make our cheese. We press the cheeses in large 30 lb wheels and then brine or salt and age them in a humidity and temperature-controlled room.

How to Care for your Creamery items.

Let’s start with cheese. You will want to eat fresh cheeses within the week; they are not designed for storage. Those would be ricotta and Queso Fresco (fresh basket cheese). For aged cheeses, they will store well in the vacuum packages they come in, and once opened, you want to minimize exposure to air. So you can always vacuum seal it if possible or wrap it tightly. If any mold appears, you can easily cut it off; it will only be on the surface. You can also freeze cheese for later use.

Yogurt is a fermented food that lasts a couple of weeks. If you only have a small portion left, put it in a smaller container so that, once again, it is less exposed to air. 

Butter is kept well refrigerated. If you leave it out, cut off a small portion so it doesn’t sit at room temperature for too long. 

Our eggs are not washed as we have rolling nesting boxes, so they are clean when collected. They can be stored at room temperature or in the refrigerator.

Our milk and cream are sold the day we milk or make them. If stored in the refrigerator, they will last a week. If you have any questions, please reach out. We are here to ensure you enjoy your fresh, raw creamery items.
